Over 40 years ago, three friends founded a small caviar venture on the banks of the Caspian Sea. What began as a quiet indulgence quickly became a sought-after delicacy. Its refined flavour, irresistible allure, and unmistakable air of luxury captured the taste of the discerning few.
As demand grew, so did the pressure on the wild sturgeon population, eventually leading to its designation as an endangered species. In response, a bold decision was made: to sustainably farm these magnificent creatures. Using the very same sturgeon species native to the Caspian, the operation was relocated to Northern Italy, where pristine, continuously flowing spring water near Lake Garda offers the perfect environment for aquaculture.
Twelve years later, after meticulous care, patience, and expertise the first harvest of these precious black pearls emerged.

With over three generations of aquaculture knowledge behind it, the farm is now lovingly tended by Marco, a farmer who treats his sturgeon with genuine care and reverence. From rearing to harvesting, sorting to packing, every step is done by hand, with the highest artisanal standards.
